When Eric de Rothschild visited Aussières in 1999 he was immediately charmed by this place of untamed beauty, with amazing soul and history. The 170 hectares at the centre of the estate had been used to grow grapes for the better part of the last 2000 years. Over the past 20 years, tremendous work and investments have been engaged in both the vineyard and the winery, and Aussières is now recognized as one of the spearheads of Languedoc's renewal.

The estate is nestled in the rugged hills just behind the Mediterranean coastline of Narbonne, in the South of France. The soils are very shallow; rocky on the slopes and deeper & sandy on the plain. Yields are voluntarily kept very low in order to preserve the vines and ensure the production of high quality grapes. This Chardonnay comes form the coolest plots of Aussières and selected neighbouring terroirs, in order to obtain a wine with distinctive freshness.
Tasting notes: Nice aromatic elegance on the nose with delicate notes of citrus fruit and white flowers. On the palate the wine reveals good volume without being heavy. The finish shows good length with aniseed and citrus notes

Vinification details: Grapes are harvested before daylight when temperatures are at their lowest. After a few hours of cold maceration, they are pressed and fermented at low temperature in stainless steel tanks to preserve their aromatic potential. The wine is partly aged on lees in order to obtain a good balance between roundness and freshness.
