Tasting notes
A unique flavor profile featuring notes of blood orange, Japanese plum (sumomo), acerola, red shiso, noshi-ume (a traditional dried plum confection from Yamagata), and a hint of bell pepper. A subtle smokiness also comes through on the nose. On the palate, it’s light-bodied with refreshing red fruit flavours reminiscent of acerola, accompanied by gentle acidity and soft tannins. Perfect for casual moments—whether it’s an aperitif with friends or a picnic. For the best experience, enjoy it on the day the bottle is opened.

Food pairing
Roasted duck served with yuzu pepper or sansho sauce, grilled eggplant and shiitake mushrooms with dengaku miso, seared bonito (katsuo no tataki), vinegared mackerel (shime saba), chicken meatballs flavored with plum and shiso, chèvre cheese, smoked salmon and dill canapés, roast chicken, ratatouille, chilled tomato and shiso pasta, red berry compote.

Winemaking
Ciao! Ciao! is a sibling wine to Piacere!, both vinified by Fattoria AL FIORE from the same grape variety: Steuben. This dark purple grape, originally from New York State, is mainly cultivated in Aomori Prefecture and is used not only for fresh consumption but also for juice and winemaking.

For this wine, fully ripe, destemmed Steuben grapes were packed into a large tank. The free-run juice naturally extracted by the weight of the grapes was used to produce Piacere!, while the remaining portion was vinified as Ciao! Ciao!. The maceration period was 15 days. Since the ratio of skins and seeds left relative to the juice was as high as 200%, a moderate amount of tannin was also extracted. The wine was bottled right after fermentation and racking, before the lees had fully settled, resulting in a slightly cloudy appearance. As malolactic fermentation occurs in the bottle, the wine has developed a dry, slightly tannic character with a faint hint of fizz—exactly the kind of playful, rustic wine it was intended to be.
