Colombia Sudan Rume Natural Filter - Single OriginAt the forefront of innovation sits Rigoberto Herrera of Cafe Granja La Esperanza (C.G.L.E.) the producer of this coffee. ‘Las Margaritas’ is one of the five farms owned by Rigoberto and his brother Luis. It doubles as C.G.L.E’s Varietal Garden, with a multitude of exotic and experimental varietals planted like patchwork across the landscape.Sudan Rume is an exotic varietal that is extremely difficult to cultivate. Once Cafe Granja was able to source the seed stock, it was planted at Las Margaritas where the growers were happy to discover that it was ideally suited to the climate and conditions of the area. Before this varietal was brought to Las Margaritas, multiple soil studies were done to find the best conditions and optimal elevation for growing.As the name suggests, Sudan Rume originates from the Boma Plateau in Southern Sudan, near the Ethiopian border. It is an heirloom Arabica plant, often used as a component in hybrids because of its prized flavours and moderate resistance to disease. Its one downfall is its low yield, making it rare as a standalone coffee.Picking which occurs at the peaks of harvest ensure the cherries in this natural processed lot are at their prime before processing. These whole cherries are fermented dry in tanks with extreme care within a closed facility, to control ambient temperatures.
