Tasting notes
Apricot, lily, orange, with subtle hints of clove and almond. The aroma is reminiscent of orange wines from Georgia or northern Italy. The palate is light and floral, with flavors akin to citrus-infused tea, complemented by minerality from ceramic jar aging. It features the pleasant bitterness characteristic of Koshu and tannins derived from the grape skins. To enjoy its freshest flavour, please consume within a few hours of opening.

Houtou hot pot (flat Udon noodles and vegetables in miso soup), salt-grilled mackerel, miso-marinated grilled salmon, sansho-grilled chicken, tempura (maitake mushrooms, shrimp, lotus root), shio-koji pickled vegetables, nukazuke (Japanese fermented pickles), Shaoxing wine-steamed shrimp, tapenade, spicy tahini noodle, achaar. 

Winemaking
Koshu is a white wine grape indigenous to Japan with a history of more than 1,000 years; in 2010 it was registered as the first Japanese variety with the OIV (Organisation Internationale de la Vigne et du vin). Its ancestors originated in Europe. It arrived in Japan via the Silk Road with the East-West trade. It is currently cultivated mainly in Yamanashi Prefecture. It is characterised by its reddish-purple skin and ample juice. Domaine Hide started out as a winery growing only black grapes, but the beauty of the peach-coloured Koshu grape captivated them and they are now growing 40 a of Koshu.

After fermenting Koshu grapes using the carbonic maceration method, the wine was pressed and aged equally in both ceramic jars and tanks before being carefully blended for balance. The jars used for aging were specially developed in collaboration between Domaine Hide and Kashogama, a Kyoto ware (Kyo-yaki) pottery led by fourth-generation master craftsman Kasho Morioka. These jars are Japan’s first ceramic vessels designed specifically for aging wine. Unlike amphorae, they are not coated with wax on the inside, allowing the characteristics of the clay and the firing process to directly influence the wine, imparting a unique flavor profile.
