Dubai Chocolate Recipe (with Tahini)

Ingredients

Chocolate Shell

  • 300 g milk chocolate
    (or 50% milk + 50% dark for balance)

Filling

  • 150 g kataifi (shredded kataifi pastry)
  • 2 tbsp unsalted butter
  • 180–200 g pistachio cream
  • 2–3 tbsp tahini 
  • Pinch of salt

Optional

  • Crushed pistachios
  • Edible gold dust

Instructions

1. Toast the Kataifi

  1. Finely chop the kataifi.
  2. Melt butter in a pan over medium heat.
  3. Add kataifi and toast until golden and very crispy.
  4. Let it cool completely (important for texture).

2. Make the Filling

  1. In a bowl, mix pistachio cream, tahini, and salt.
  2. Fold in the cooled, crispy kataifi.
  3. The mixture should be thick, nutty, and slightly crunchy.

3. Prepare the Chocolate Shell

  1. Melt the chocolate using a double boiler or microwave.
  2. Pour a thin layer into silicone molds.
  3. Tilt to coat the sides.
  4. Refrigerate for 8–10 minutes until set.

4. Assemble

  1. Add the pistachio–tahini–kataifi filling (don’t overfill).
  2. Cover completely with melted chocolate.
  3. Tap the mold gently to remove air bubbles.

5. Chill

  • Refrigerate for 30–40 minutes until fully set.
  • Unmold carefully.
