STORAGE & EXPIRATION

The shelf life of homemade peanut brittle can vary depending on how it is stored, but it generally lasts for a considerable period.  

Room Temperature Storage: When stored properly in an airtight container at room temperature, homemade peanut brittle can last for 1 to 2 months. It's crucial to keep it in a cool, dry place away from light and humidity, as moisture is the primary enemy of brittle and can cause it to become sticky and lose its crunch. Some sources suggest it can last up to one month on the countertop if stored in an airtight container with wax paper between layers. 

Freezer Storage: For a longer shelf life, homemade peanut brittle can be frozen. If stored in an airtight container or a freezer-safe bag (with layers separated by waxed paper), it can last for up to 3 months in the freezer. However, be aware that freezing might slightly alter the texture of the brittle. When ready to eat, thaw it on the countertop for a few hours. 

Factors Affecting Shelf Life:

Storage Container: Use an airtight container to prevent exposure to air and moisture. Glass jars with rubber seals, high-quality plastic containers with locking lids, or vacuum-sealed bags are good options. 
Humidity: High humidity can cause brittle to absorb moisture, leading to a chewy or sticky texture instead of the desired crunch.
Temperature: Storing brittle in a cool environment helps maintain its quality. Avoid exposure to heat.
Light: Keeping brittle out of direct light can also help preserve its freshness.

What to Avoid:

Refrigeration: Most sources advise against storing peanut brittle in the refrigerator. The moisture in the fridge can cause the brittle to soften and lose its characteristic texture. 

Signs of Spoilage: If your peanut brittle has gone bad, you might notice:

A stale or rancid smell, particularly from the nuts.
Changes in texture, such as becoming excessively sticky, hard to break, or overly chewy instead of crunchy.
The presence of mold (though this is rare).
