Guayabales is a return coffee, and one that we hope to bring back year after year. The Villatoro family in Huehuetengo produces excellent, clean, sweet coffees and it is always a treat to roast and showcase their work. Producer Pedro Villatoro oversees a precise operations–agressive pruning methods for maximum cherry ripeness, cleverly use of land and tree shade for slow maturation, and the cultivation of multiple varietals to insure against failures. He works with his sons Ervin and Nehamias who continue the family tradition.
